Oysters with Spicy Topping - Prep. Time 45 Minutes
Available again starting Wednesday, March 20thINGREDIENTS FOR OYSTERS: 36 Large Willapa Oysters, 3 Eggs, 2 cups Flour, 2 tablespoons milk, 2 cups Corn Meal, 1 teaspoon Salt, Fresh ground black Pepper, 2 tablespoons Olive Oil, Parsley for garnish, Rock Salt for serving.
INGREDIENTS FOR TOPPING: 1 clove minced Garlic, 2 tablespoons chopped Sweet Red Pepper, 1/2 minced small Onion, 2 minced Chiles, juice of one Lime, 2 tablespoons Olive Oil, 1 teaspoon chopped Parsley, 1/2 teaspoon minced fresh Ginger, Salt.
PREPARATION TOPPING: Combine Garlic, Sweet Red Pepper, Onion, Chiles, Lime juice, Olive Oil, Ginger and Salt. Mix and reserve while preparing Oysters.
PREPARATION OYSTERS: Open Oysters in microwave. Donīt cook, just open. Discard top shells. Reserve 18 bottom shells (you will put two oysters in each bottom shell). Mix Eggs and Milk in small bowl. Mix Flour, Corn Meal, Salt and Pepper in another bowl. Place Oysters on paper towel and pat dry. Dip Oysters in Egg and then in Flour and Corn Meal mixture. Fry Oysters in hot skillet. Use just enough olive oil to cover bottom of skillet. Fry oysters 1 minute on each side. Turn only once.
Remove Oysters from skillet to paper towel and pat dry again to remove any excess oil. Arrange 2 Oysters in each shell. Place Oysters on bed of Rock Salt on a serving tray. Put 1/8 teaspoon of spicy topping on each oyster. Garnish with Parsley.
