Oyster Salad Seviche - Prep. Time 30 Minutes + 1 hour in Refrigerator

24 Small Willapa Oysters, juice of 3 fresh Limes, 1/2 cup fine chopped Scallions, 1 very fine chopped clove Garlic, 1/2 cup chopped fresh green Tomato, 4 tablespoons Olive Oil, 1/2 cup shredded bib Lettuce, Salt, fresh ground Black Pepper
Open Oysters in microwave. Just open, donīt cook. Discard top shells. Remove meat from bottom shells. Reserve in refrigerator to cool, 12 cleaned and dried bottom shells. Discard remaining 12 bottom shells. Place Oyster meat in glass bowl, add Lime juice, Scallions, Garlic, Tomato, Olive Oil, Salt and Pepper. Stir lightly, cover bowl and place in refrigerator for 1 hour. After cooled add Lettuce, mix lightly and place in 12 prepared Oyster shells. Serve cool as appetizer.
