Oysters with Almonds - Prep. Time 45 Minutes

18 large Willapa Oysters, 3 tablespoons melted Butter, 1 cup very coarse Bread Crumbs, 1 cup dry White Wine, 1 clove Garlic, 3/4 tablespoon fine chopped parsley, 3 tablespoons chopped Almonds, Salt, White Pepper, Rock Salt for serving platter
Put Bread Cubes in White Wine. Mix together with Almonds, Garlic, Parsley and melted Butter, Salt and White Pepper to form a light paste. Reserve for later use. Open Oysters in microwave. Just open, donīt cook. Discard top shells. Cut Oyster meat from bottom shell. Leave meat in bottom shell. Preheat broiler. Put Rock Salt on ovenproof serving platter and arrange Oysters on platter. Cover each Oyster with 1 full teaspoon of Almond paste. Place platter about 10 inches from heating element of broiler. Broil for 4-6 minutes. Serve immediately.
