Panco Bread Crumb Oysters - Prep. Time 45 Minutes
Available again starting Wednesday, March 20thINGREDIENTS: 12 large Willapa Oysters, 1/2 cup Flour, 2 Eggs, 1/2 cup Milk, 1 1/2 cup Panco Bread Crumbs, Salt and Black pepper, 3 tablespoons Vegetable Oil
WASABI SAUCE: 1 tablespoon Wasabi powder, 4 tablespoons Sour Cream, 1 tablespoon water
SHREDDED SALAD BASE: 1/2 cup Shredded Cabbage, 1/2 cup Shredded Endive, juice of 2 Limes, 1 tablespoon Olive Oil, Salt and Black Pepper
PREPARATION: Open - donīt cook, just open - Oysters in microwave. Remove meat from shells. Retain bottom shells. Drain Oysters in plastic strainer. Pat dry on paper towel. Dust Oysters in flour. Wisk Eggs and Milk just enough to break yokes and mix with milk. Coat each Oyster with Egg. Coat Oysters with generous layer of Panco. Fry at medium heat with just enough Vegetable Oil to prevent sticking to skillet. Shake skillet frequently. Turn Oysters just once. Fry 3 minutes. Drain on paper towel. Put shredded Cabbage and Endive seasoned with Lime juice, Olive Oil and Salt in shells. Arrange fried Oysters in shells. Drizzle with Wasabi sauce.
