Broiled Oysters with Jalapeño - Prep. Time 45 Minutes
Available again starting Wednesday, March 20thINGREDENTS:
24 Medium Willapa Oysters, 6 fresh Jalapeños roasted, peeled and seeded, 1 clove chopped Garlic,
1/8 teaspoon Chile powder, 1/8 teaspoon Oregano, 1/2 teaspoon Cumin, 1/2 teaspoon chopped Cilantro,
4 tablespoons Olive Oil, 2 tablespoons Water, Salt, Rock Salt for serving platter, 1 fresh Lime
Mix in a food processor the Jalapeños, Garlic, Chile powder, Oregano, Cumin, Cilantro, Olive Oil, Water and Salt. When smooth paste
is formed, reserve until ready to use.
Open Oysters in microwave. Just open, don´t cook. Discard top shells. Cut meat from bottom shell. Maintain meat in bottom shell.
Preheat broiler. Prepare ovenproof serving platter with bed of Rock Salt. Place Oysters on serving platter,
put 1/3 teaspoon Jalapeño paste on each Oyster. Place serving platter about 10 inches from heating element. Broil for 3-5 minutes.
Serve with wedges of fresh Lime.
