Clams Casino - Prep. Time 30 Minutes

INGREDIENTS:
3 lbs. Willapa Cherrystones, 1 stick softened Butter, 1 finely chopped Scallion, 1/4 teaspoon Oregano, 8 drops Tabasco, 4 slices Bacon cut in 1 inch pieces, Salt and fresh ground Black Pepper, Rock Salt
PREPARATION:
Preheat oven to hot 500°F. Open Cherrystones in microwave. Just open, don´t cook. Discard top shells. Cut meat from bottom shell, leave in shell. Arrange clams on bed of Rock Salt on ovenproof serving platter. Mix Butter and chopped Scallions, Oregano and Tabasco. Dab each Cherrystone with 1/2 Teaspoon of mixture. Top with Bacon. Bake 6 minutes, until Bacon is crisp and Butter is bubbling. Serve very hot.
