Garlic Broiled Oysters - Prep. Time 35 Minutes

INGREDIENTS:
24 Willapa Oysters, 1 tablespoon fine chopped Parsley, 4 ounces Butter, 3 cloves Garlic, 6 green Scallions, Salt, Black Pepper and Rock Salt for serving platter
PREPARATION:
Open Oysters in microwave. Just open, donīt cook. Discard top shells. Cut Oyster meat from shells and maintain in lower shells. Place Oysters on ovenproof serving platter covered with bed of Rock Salt. Preheat broiler. Crush Garlic and chop Scallions fine. Mix with Butter, Salt, Black Pepper and chopped Parsley. Place in small pan over low heat until butter melts. Put 1/2 teaspoon of melted mixture on each Oyster. Place serving platter under broiler about 10 inches from heating element for 2-4 minutes until Oysters are hot but not overcooked.
