Paprika Manila Clams - Prep. Time 15 Minutes

INGREDIENTS:
2 lbs. Willapa Manila Clams, 3 tablespoons White Wine Vinegar, 1/4 cup dry White Wine, 1/4 cup Water, 2 tablespoons Paprika, 3 tablespoons Butter, Zest of 1 Lime, Salt and fresh ground Black Pepper
PREPARATION:
In sauce pan heat Vinegar, White Wine, Water, Lime Zest. Add Clams. Cook for 4-5 minutes until Clams open. Turn off heat. Sprinkle with Paprika and mix to coat all Clams. Remove Clams into bowl(s) with slotted spoon. Add Butter, Salt and Pepper to taste to remaining liquid in pan. Pour liquid over Clams. Serve immediately.
