Broiled Oysters with Watercress - Prep. Time 40 Minutes

INGREDIENTS:
24 large Willapa Oysters,
2 1/2 cups watercress leaves, washed and dried,
1 medium onion, minced,
1 tablespoon minced parsley,
1/2 cup fresh bread or cracker crumbs,
2 tablespoons soft butter,
1/2 teaspoon salt,
1/8 teaspoon ground black pepper,
1/3 cup olive oil,
juice 1/2 fresh lime.
PREPARATION: Just open, donīt cook - 24 oysters in microwave. Discard top shells. Remove meat. Retain 12 bottom shells. Blanch oysters in boiling water for 1 minute, drain, cool and mince. Mince 1/2 cup watercress and add to oysters. Mix in onion, parsley, bread crumbs, soft butter, 1/4 teaspoon salt and Black Pepper. Mix well and divide between 12 oyster shells. Compact mixture in shells to nice rounded shape. Place oysters on baking sheet. Broil in oven about 10 inches from heating element for 7 minutes or until nicely browned. Toss remaining watercress with olive oil, salt and juice of 1/2 lime. Use watercress as base for oysters on individual plates or serving platter.
