Tempura Willapa Clams - Prep. Time 30 Minutes
INGREDIENTS:
3 lbs. Willapa Cherrystone Clams, 1 Egg, 1 cup Flour, 1 cup VERY COLD ice Water, Vegetable Oil
PREPARATION:
Open Clams in microwave. Just open, don´t cook. Remove meat from shells. Discard all shells. Drain Clams in plastic strainer. Put on paper towel and pat dry. Reserve. Heat Vegetable Oil to 340°F for frying in sauce pan. Beat Egg in bowl, add ICE COLD Water, add Flour. Mix batter lightly. Do NOT over mix batter. Dip Clams in batter and fry until light golden brown. Drain quickly on rack. Serve immediately with preferred dipping sauce.
