Algarve Oysters - Prep. Time 25 Minutes
INGREDIENTS:
24 large Willapa Oysters, 3 tablespoons Butter, 1 tablespoon finely chopped flat Parsley, 1/2 cup dry White Wine, 1/2 cup coarse Bread Crumbs, 2 tablespoons grated dry white Goat Cheese, Salt and fresh ground Black Pepper, Rock Salt
PREPARATION:
Open Oysters in microwave. Just open, donīt cook. Discard top shells. Cut meat from bottom shells but leave meat in shells. Heat oven broiler. Mix Butter, White Wine, Bread Crumbs, Salt and fresh ground Black Pepper to taste in small bowl. Arrange Oysters on bed of Rock Salt on ovenproof serving dish. Top Oysters with Bread Crumb mixture. Sprinkle with Goat Cheese and then with Parsley. Brown quickly in broiler 5 to 7 minutes.
