Tapas - Spanish Broiled Oysters - Prep. Time 30 Minutes
INGREDIENTS:
24 medium Willapa Oysters, 2/3 cup coarse Bread Crumbs, 2 cloves crushed Garlic, 2 tablespoons chopped flat leaf Parsley, 1/3 teaspoon Oregano, 4 tablespoons Olive Oil, Salt and freshly ground Black Pepper, Rock Salt
PREPARATION:
Open Oysters in microwave. Just open, donīt cook. Discard top shells. Cut meat from bottom shells but leave in shells. Preheat oven broiler. Mix Bread Crumbs, Garlic, Parsley, Oregano and Olive Oil in a small bowl. Salt and freshly ground Black Pepper to taste. Arrange Oysters on bed of Rock Salt on ovenproof serving dish. Sprinkle Bread Crumb mixture over each Oyster and brown in broiler for 5-7 minutes. Serve very hot.
